I made this raw carrot cake for my husband’s birthday and it was fabulous! This cake looks like heaven! Both times vegans,non vegans and everyone in between loved it. I also really need some good recipes using my dehydrator. I love how you can change the amount of servings and the recipe amounts change accordingly! I transferred the mixture into this in two batches, and it blended nice and smooth! You may want to try a similar method with the parchment paper as we did in this recipe. Whoop! I have a tree nut allergy. Add all the other ingredients and process until the dough is well combined. No gluten… just nice things We all had it for breakfast and it was delicious!

It is delish and feels so healthy putting it into my body. I’m not sure which other nuts would be able to deliver the desired texture.

I am going to make this for Thanksgiving. (Smaller food processors can be used - the ingredients just need to be blended in batches as to not overflow the bowl. Made this for a vegan lunch and LOVED it! I made this as dessert for a dinner party tonight, and everyone loved it and were surprised that it was homemade and healthy.

I’m not sure mine was big enough. I use less walnuts than the recepie and I love it. I’m making it for the second time. I will definitely be making this again. I’m loving raw food and my dehydrator right now, but Meghan has a great muffin recipe that uses carrot pulp: Is it possible to substitute the nuts?

I have used dried pineapple and it tastes great without ruining the consistency:). And the best thing it is healthy and all natural and raw ingredients!! Like all of your recipes,substitutions work well if the general theme of what is being produced is followed.

Next time id maybe increase my quantities.

Can I sub cashew with hazelnuts, almonds or Brazil nuts? It sounds delicious and easy but I have a question. Just found this recipe and want to make it but I feel like it’s a LOT of dates, I get it that it needs to stick together but we don’t eat much sugar at our house and I don’t want it to be too sweet, could I use less amount of dates or substitute with something else? Every time I look at Dana’s recipes and videos, I’m struck by how beautiful and professional everything looks. And an incredible texture stab a piece with a fork no crumbs! We think it should be fine. BEST cake recipe hands down! Trying to break apart dates itself was a challenge and the final mixing had to be done by hand cos everything started to stick and get puréed. Absolutely delicious. This has to do with a blender. And coconut flour, milk and cream are processed so don’t really feel this is a raw recipe. I would double the frosting next time, as some stated below the recipe amounts gave me a much thinner layer of “frosting” which is kinda the best part! I’m such a fan of carrot cake but often find it so laborious to make—defintiely adding this to the list and can’t wait to report back.

By mixing gently as opposed to blending in a food processor, you can keep a lighter, less dense, more "cake-like" texture. This means I cannot have cream cheese, but I really miss cream cheese frosting. I wanted to do that with this cake to try to recreate that nostalgia.
